Pacific Beach already has plenty of coffee shops, but Infusion Lab immediately felt like it was trying something different. The menu is built around experimenting with flavors, ingredients and recipes, while the room brings warm wood, deep color and a wall of records into the experience.

We shared the Mango Matcha. That was our actual order on this visit, so it is the drink behind this first impression. The mango adds a bright fruit layer to the matcha and fits the café’s idea of taking something familiar in a more playful direction.

Infusion Lab feels less like a predictable café and more like a place still developing its own formula.

What interested us most was the amount being made inside the shop. Infusion Lab prepares its syrups, fruit purées, matcha components and desserts in house. That approach gives the menu room to change and makes us curious about what the café will create next.

The atmosphere matters here too. The café has the kind of seating and warm lighting that makes staying for the drink feel better than grabbing it and leaving. The record wall gives the room personality without turning the music theme into a gimmick.

Because Infusion Lab was still new when we visited, we see it as one to watch. Our visit was a first look at a concept that is clearly built to keep experimenting.

The name started at home.

Owner Aydin’s elaborate drip coffee system at home inspired the idea behind Infusion Lab. His interest in infusing and experimenting with coffee supplied the “Infusion,” while everything being created behind the counter made “Lab” the natural second half.
