Could Phinology be one of our top three coffee shops? After this visit, we honestly thought so. We went in with expectations and came out talking about how well it handled both coffee and matcha. That combination is not always easy to find, and it is why this Convoy stop has earned an LDK Favorite.
Our order covered Strawberry Shortcake Matcha, Mango Matcha and Biscoff Cookie Butter Vietnamese Coffee. All three were incredible. It gave us a chance to try both sides of the menu instead of judging a coffee shop from one drink, and we left feeling just as enthusiastic about the matcha as the Vietnamese coffee.
The salty cold foam deserves its own mention. It brought the balance we wanted to each sip without overpowering the drinks underneath. The foam was a memorable part of the order, rather than something we could barely notice once it mixed into the cup.

Lana’s favorite is the matcha with salty cold foam. If you are choosing one addition to ask about, that would be our starting point. We liked that it added something to the drink while still letting the matcha come through, and it is the part of the visit she specifically wanted to highlight.
The Strawberry Shortcake Matcha and Mango Matcha made the matcha side worth exploring. We enjoyed both, so this is a place where choosing between a fruit matcha and coffee does not feel like one person has to settle. The Biscoff Cookie Butter Vietnamese Coffee rounded out our order and held its own alongside them.
That is what made Phinology stand out to us. We were not leaving with one good drink and two we would skip next time. We enjoyed the whole order, and the foam gave us an extra reason to remember it.
Our photos show a bright café with warm seating and a glowing Phinology sign. It makes a cheerful backdrop for a drink stop, but the drinks are the reason it belongs on our favorites list. The presentation caught our attention and the actual order met the expectations.

The phin behind Phinology
The name is a nod to the phin, the traditional Vietnamese filter used to slowly brew coffee. Phinology’s founder describes discovering that brewing ritual on a trip to Vietnam and later sharing Vietnamese coffee with coworkers during hospital shifts. The café grew from that connection between coffee, care and Vietnamese tradition.
